Preserving Cucumbers


Afternoon I´m dedicating my time to preserving cucumbers to have some delicious pickles for worse winter time. Bad luck is that this year the price of cucumbers increased from 6 czk per kilo to 20 czk, but i don´t pay for that so i don´t care. My job is to make them tastey.
Firstly is necessary to clean the cucus properly cause who´d like to eat mud infusion... The best way is to put them into a dishpan full of water and brush them one by one.
Next step is making a perfect pickle. I love it both sweet and harsch. What is absolutely needed is a big cooker, best content about 20 litres. For 10 litres of water I use 2 litres of vinegar. In my country the cheapest vinegar is the spirit type and has the 8% content (8% solution of acid acetic in water). Give the water and vinegar into the gigantic cooker, add about 650 grams of white sugar, 1/4 kilo of salt, at least 15 pcs of bay leaf (also known as laurel bay), 76 pcs of black pepper (the little balls), about 40 pimiento balls.
Step 3: have kilo of carrots, brush them and cut into round slices. 10 nice fresh big onions cut into round slices. This year i have 45 jars (content 0,7l) of preserved cucumbers.
